Earthy Flavors with Envy Sweetness

Kale salads have been all the rave – add its earthy flavor with the sweetness of Envy Apples for a balanced savory dish. 

•    1 bunch Kale, ribs discarded, leaves finely chopped
•    ½ cup olive oil
•    2 tablespoons fresh lemon juice
•    1 teaspoon honey 
•    2 Envy Apples, quartered and cubed
•    ½ red cabbage, shredded
•    1 cup cooked quinoa 
•    Salt and pepper to taste

•    Massage kale in mixing bowl for 2 minutes
•    Pour olive oil, lemon juice and honey over kale and toss to coat
•    Fold Envy Apple, cabbage and quinoa into the salad 
•    Add salt and pepper to taste
