Inspiration from The Pie Shoppe

Not too long ago we visited the famous Vancouver, BC pie shop… The Pie Shoppe! Located in Chinatown, this sweet joint run by two sisters features freshly baked pies and top-notch coffee. We had the pleasure of watching co-owner Stephanie recreate their Classic Apple Pie with Envy apples. A very special experience.



  • 3 cups of unbleached white flour 
  • 1/2 cup cold butter
  • 1/2 cup shortening
  • 1/3 cup cold water
  • Pinch of salt

Apple pie filling

  • 6-8 apples core & peel very thin slices
  • 1/2 cup sugar
  • 3 tablespoons tapioca flour
  • 1/2 ground cinnamon
  • 1/2 lemon juice squeezed



  • Blend fat into flour
  • Gradually add water (do not over mix)
  • Set aside in fridge to relax while you peel and core the apples for filling

Apple pie filling

  • Squeeze lemon juice over apples and toss
  • Blend sugar, cinnamon and tapioca in a bowl
  • Add mixture to apples and toss

Finishing up…

  • Roll dough
  • Fill pastry bottom with apples and pack down
  • Roll lattice strips for top and crimp edges
  • Egg wash and sprinkle with sugar
  • Bake pie in oven at 350 F for 1 hour and 15 minutes until pie juices bubble
  • Cool and serve with vanilla ice cream
