Loafing Around

With apple and carrot accents, this turns a basic loaf into something special. Enjoy a slice with some raspberry jam from the farmers market over afternoon tea - delightful. 

Ingredients 

  • 1 egg
  • 1/4 cup olive oil
  • 1/3 cup mashed banana
  • 1/4 cup honey
  • 1 Envy apple, finely grated
  • 1/2 tsp salt
  • 1.5 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup plain almond milk
  • 1 cup grated carrot
  • 2/3 cup rolled oats
  • 1/2 cup almond meal
  • 1 cup quinoa flour
  • 1/4 cup coconut flakes for topping
  • 1/4 cup chopped hazelnuts for topping

Directions

  • Preheat oven to 375 degrees F (190 C)
  • Lightly grease tin
  • Mix egg, mashed banana, honey, olive oil and whisk to combine
  • Next add grated apple, baking soda, salt and cinnamon
  • Add almond milk and stir
  • Add grated carrot, oats, almond meal, flour and stir
  • Pour into tin and top with chopped walnuts
  • Bake for 45 minutes to 1 hour. Remove from oven and let set in the pan for 15 minutes before serving
