Apple Carrot Loaf

  • 1 egg
  • 1/4 cup olive oil
  • 1/3 cup mashed banana
  • 1/4 cup honey
  • 1 Envy apple, finely grated
  • 1/2 tsp salt
  • 1.5 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup plain almond milk
  • 1 cup grated carrot
  • 2/3 cup rolled oats
  • 1/2 cup almond meal
  • 1 cup quinoa flour
  • 1/4 cup coconut flakes for topping
  • 1/4 cup chopped hazelnuts for topping

Directions

Preheat oven to 375 degrees F (190 C)

Lightly grease tin

Mix egg, mashed banana, honey, olive oil and whisk to combine

Next add grated apple, baking soda, salt and cinnamon

Add almond milk and stir

Add grated carrot, oats, almond meal, flour and stir

Pour into tin and top with chopped walnuts

Bake for 45 minutes to 1 hour. Remove from oven and let set in the pan for 15 minutes before serving
