Apple Pie

Pastry

  • 3 cups of unbleached white flour 
  • 1/2 cup cold butter
  • 1/2 cup shortening
  • 1/3 cup cold water
  • Pinch of salt

Apple pie filling

  • 6-8 apples core & peel very thin slices
  • 1/2 cup sugar
  • 3 tablespoons tapioca flour
  • 1/2 ground cinnamon
  • 1/2 lemon juice squeezed

Directions

Pastry

  • Blend fat into flour
  • Gradually add water (do not over mix)
  • Set aside in fridge to relax while you peel and core the apples for filling

Apple pie filling

  • Squeeze lemon juice over apples and toss
  • Blend sugar, cinnamon and tapioca in a bowl
  • Add mixture to apples and toss

Finishing up…

  • Roll dough
  • Fill pastry bottom with apples and pack down
  • Roll lattice strips for top and crimp edges
  • Egg wash and sprinkle with sugar
  • Bake pie in oven at 350 F for 1 hour and 15 minutes until pie juices bubble
  • Cool and serve with vanilla ice cream
