Creamy Sweet Peas & Caramelized Envy™ Apples
1 (16 oz) bag of frozen peas, thawed
2 Envy™ apples, small diced
2 T lemon juice
2 T heavy cream
Zest of ½ lemon
1 t kosher salt
½ cup microplaned parmesan cheese
1 T unsalted butter + 4 T unsalted butter, diced and kept cold
Melt 1 T butter and stir in diced Envy™ apples. Saute until caramelized, about 3 minutes.
Add thawed peas, salt, cream, and lemon juice, bring to a simmer and cook until half of the liquid is gone - about 1 minute, stirring frequently.
Turn off heat and quickly stir in parmesan, lemon zest, and 4 T diced cold butter. Continue to quickly stir until all of the butter is emulsified in (Meaning its kept creamy and not allowed to just melt. This will give you creamy peas versus greasy peas)
