Spiralized ENVY™ Apple & Kale Salad

For the salad
2 ENVY™ apples, peeled and spiralized
1 bunch kale, very thinly sliced
1 cup feta
½ cup sliced almonds, toasted
½ cup dried cranberries

For the vinaigrette
½ cup greek yogurt
2 T chopped parsley
1 T lemon juice
1 T extra virgin olive oil
½ tsp kosher salt
20 turns fresh cracked black pepper

Equipment needed
Spiralizer
Large mixing bowl
Small mixing bowl

Directions

In a small mixing bowl, whisk together all ingredients for vinaigrette

In a large mixing bowl, toss the sliced kale with the vinaigrette until well coated

Add apples, cranberries, and almonds, and toss to combine

Top with crumbled feta and serve immediately
